Blueberry Crumble Pie with Shortbread Crust

I love blueberries….any way you fix them.

Growing up, my Grammy made a lot of blueberry muffins, blueberry cobblers, and, occasionally, a blueberry pie. For quite a few summers in a row, one of my Uncle Mo’s good friends provided a steady supply of fresh blueberries.  Grammy always froze them and we had (almost) fresh blueberry baked goods all year round.  I can still easily bring to mind the smell of freshly baked blueberry goodies, no matter how they were baked.

I like to take advantage of getting them fresh, while they’re in season during the summer.  Garen brought home a few boxes of blueberries from our new Kroger (which I’m currently loving) on Friday.  I had initially bought them to make muffins but didn’t get to it Saturday morning so I decided to bake a pie for us instead.

As a side note, I use a lot of frozen blueberries throughout the year for baked goods and they work well too but fresh blueberries are easier than thawing out frozen ones.  I’m letting my lazy-mama features shine brightly, right?!?

This Blueberry Crumble Pie with Shortbread Crust is an modified version of a recipe from Williams-Sonoma and you can find that recipe here.  Below is my adapted version, which includes a fantastic shortbread crust.  I honestly can’t remember exactly where the crust comes from- I think a combination of Pinterest and blog posts, plus a little bit of trial and error.  Wherever it came from, it’s the one I like to use- I’m too much of a perfectionist to even attempt making a regular homemade pie crust since they always turn out looking terrible for me and it drives me bananas! If you don’t like thick crusts, this one is not for you.

This pie crust is perfectly sized for my favorite pie dish. (I’ll have to share the recipe on another post- again, lazy-mom) One of these days I’m going to splurge and get the red pie dish. I started with the white version since I’m such a matchy-matchy person and white is easier to match with other dishes if you’re taking a pie somewhere.  I digress….

Here’s my version of a Blueberry Crumble Pie with Shortbread Crust with a few pictures:

Ingredients

  • Shortbread Crust
  • 1-1/2 C plus 4 Tbsp. All-purpose flour
  • 1 C firmly packed light brown sugar
  • 1/3 Cplus 1 Tbsp granulated sugar
  • 3 tsp. ground cinnamon
  • 16 tbsp (2 sticks) cold unsalted butter, cut into small pieces
  • 5 cups blueberries

Directions

  • Preheat the oven to 375°F.
  • Make the shortbread crust and transfer to a 9-inch or 10-inch deep pie dish. Press into the pan.  If you have another recipe for a pie crust or a store-bought one, you can use it if its big enough as well.
  • In a large bowl, mix the 1-1/2 cup flour, 2/3 cup of the brown sugar, the 2/3 cup granulated sugar, and 2 tsp. of the cinnamon. Put the butter pieces on top and toss with a fork or your fingers to coat with the flour mixture. Using your fingertips (or, if you’re fancy, a pastry blender), work the ingredients together until the mixture forms large, coarse crumbs the size of large peas. Set the topping aside.
  • In another large bowl, combine the 5 cups of blueberries, 1/3 cup brown sugar, 1 tsp cinnamon and 4 Tbsp of the flour. Gently stir to evenly coat the blueberries.
  • Sprinkle 1 tbsp flour and 1 tbsp granulated sugar over the bottom of the shortbread crust. Pour the filling onto the crust, spreading it evenly.
  • Sprinkle the topping evenly over the blueberry filling.  (You may have extra left, depending on whether you use a 9-inch or 10-inch pie dish.  This makes great topping for muffins as well and can be refrigerated for a few days.)
  • Bake the pie until the crust and topping is golden brown and the blueberry filling just begins to bubble, 45 to 55 minutes.
  • Serve at room temperature, warm, or cold. Garen and I both like it cold better.
  • It goes perfectly with ice cream, whipped cream, or cool whip.

To add a little more sweetness to our night and go along with the pie theme, we played the Pie Face Showdown. I had forgotten how much fun this is for the kids.

The mess was worth the fun….plus, we did this right before bathtub. Easy as pie! (Pun intended).

Dashboard Randomness: Sunrises and Bluebonnets

Today I had a golf tournament for one of the regional associations I’m part of in San Antonio. Usually, when I go to San Antonio I will drive down the night before but I have been on the go so much lately I decided to just wake up early and drive this morning. And, boy, did four o’clock a.m. come early?!?

However, I really enjoyed drive. I got the opportunity to be let my mind wander and through anything and everything. No music. No audiobook audiobook. No podcast. No phone calls.

Just me and the open road, a beautiful sunrise, and miles and miles of beautiful bluebonnets.

The 130 loop around Austin is absolutely gorgeous right now. That might not seem like a logical place to go look at bluebonnets but there are miles of them in the huge median between the north and sound sides of the tollway.

Add to that, this afternoon I got to play golf on a beautiful course with some awesome customers, who made it a blast!

The only thing that would be better would be to be at home tucking my kiddos in tonight because I sure do miss them (and Garen too)! I guess you can’t have your cake and eat it too, right?!? Thank goodness for FaceTime!

Photo Friday: Mr. Chairman, My Dad

My dad doesn’t often read this. And it’s a good thing because he’s a very humble man and may not approve of me bragging on him so much. However, I’m going to brag about him anyway.

Last night he was “inaugurated” as the Chairman (equivalent of President) of the Mason Contractors of America (MCAA). He’s been on the board now for 6 years and will now serve as Chairman for two additional years.

I’m so proud of him and my mom, who supports him every step of the way. They made up the “p” and the “s” of P and S Masonry, a masonry contractor in Central Texas established in 1987. They’ve both been advocates for the masonry and construction industry for the 30+ years they’ve been in business. I’ve been fortunate enough to have worked with them both in the masonry business and now on the equipment company, Spec Rents, which they established to provide increased safety and productivity to contractors across Texas.

I couldn’t have asked for better mentors and I’m so excited that he now has the opportunity to help continue to promote masonry across the country.

Congratulations to my Dad, Paul Odom, Chairman of MCAA, and to my mom, Susie, the First Lady of Masonry.

With that said Photo Friday consists of photos from the MCAA World of Masonry in Las Vegas. They’re all iPhone photos and none taken by Garen so they many not the best but they captured the moments!

It doesn’t matter how many times I attend the World of Concrete/World of Masonry… I think I’ll always be in awe at the sheer awesomeness of the cool construction products and equipment there is available.  Yes, I’m guilty of being a masonry/construction geek!Pre-banquet photo.  Em, Brian, and I flew out yesterday just to attend the closing banquet and hear Dad make his first speech as Chairman.  Garen was already out there since Oldcastle is a big player in the industry too. It was a great surprise for Dad because he didn’t know we were coming!Here he is: Mr. Chairman. It’s official since it was in the banquet booklet!I’m so proud of this guy!

You can’t forget the First Ladies, Mom (Susie) and Colleen.  Behind every great man is a great woman.  They’ve had such a great two years traveling together.

Before boarding this morning we enjoyed a quick breakfast together as a family, minus Garen who flew American.

Did I mention that the banquet last night was at Fogo de Chao??? I’m pretty sure I ate about 3 lbs of delicious meat and had about 10 of those addicting cheese rolls soooooo I may not lose any weight this week. Totally worth it! And I was glad that I wore my stretch tent dress for the occasion.

It was a fast, furious, and fun trip and I’m so glad I got to go. We’ve got a big weekend with Anna’s dress rehearsal for the Talent Show tonight and the Pinewood Derby tomorrow. Stay tuned next week since I’m sure Garen will get some great photos.

Tomorrow morning, I’ll officially be a “cookie mom.”  You know, the crazy ladies dragging their little girls around selling those addicting little round morsels of joy???  For those of you don’t know what I’m talking about, I’m speaking of the ever-popular Girl Scout Cookies.

That’s right, folks.  Cookie Season officially kicks off tomorrow.

And, glutten-for-punishment that I am, I will be braving one of the few freezing days here in Texas to go stand in line at the zoo to pick up these boxes of tastiness.

With that said, it will all be worth it when I have 2 cases of Thin Mints in the back of my Expedition. Yummy! Yes, I’ve already calculated the Weight Watchers points.

Photo Friday: Will’s Spooktacular Costume Birthday Party

A few weeks ago we had Will’s VERY belated birthday party. His birthday is always the first week of school, meaning there’s really not enough time to invite any of his classmates besides the ones we already had addresses or parents’ phone numbers.

As we got closer and closer to Halloween, we all settled on having a Costume Party. It was fun and REALLY crazy!

Obviously, my I tried to plan a few games to keep the boys entertained. I think the easiest and most exciting game was the donut eating contest. We also did the spider throwing contest, glow ring toss, and the pumpkin racing contest….none of which I recommend for 3rd graders. They didn’t keep their attention long enough. But, hey, I tried. I get points for that, right?!?

Halloween Snacks Brain Cream Cheese Mold

I did try to do some spooky food. Can you tell that’s a brain??? I️t was super easy. Cream cheese and red pepper jelly molded into a brain mold from the Dollar Tree.

We had a great time but, like after all kid parties I’ve had at our house, I’m now pondering where we want to have it next year that I can just show up with cupcakes.

Happy (Second) Birthday/Halloween!!!

Halloween is a big holiday in our household- it’s Clara and Kate’s birthday.  Today they turn two.  I sound like a broken record every single birthday for the kids but, man, how time flies!

Maybe there’s a reason we chose dragons (or maybe I really just wanted to buy the “Mother of Dragons” shirt). I guess you’ll never know.

They’re a blast.  Every day we are watching them learn something new.  And almost always something different.

Kate prefers savory stuff (hence the sausage roll for birthday breakfast- she wasn’t happy about having her photo taken this morning)…

Makita Training and Pheasant Hunting in Utah

I was fortunate enough to be invited to attend a training and pheasant hunt in Utah with Makita this weekend.

It was a great time and I got to learn a ton about the Makita tools we carry. I’m still constantly amazed that they have soooo many battery operated tools available.

These would seriously be some awesome gifts if you’re looking for Christmas or birthday gifts for your husbands (or wives- I’d personally love the jackets).

On top of that I shot my first pheasant. These birds are really so beautiful that I almost felt guilty. However, I do have a cooler full of meat that I’m bringing back with me so I don’t feel too bad. I’m still amazed at the way the dogs worked the birds and could point them out like they did. So amazing to watch.

This morning I woke up to snow outside, which was beautiful and pretty unexpected for September.

The lodge, the food, the guides, the dogs, and everything at Pheasant Run Outfitters was outstanding. I definitely recommend it to anyone!
